4. Remove from the heat. While whisking,
drizzle the syrup mixture into the egg
white and continue whisking until
glossy. The mixture will begin to stiffen.
5. Stir in the chopped peanuts.
6. Spread the mixture over the rice paper
in the prepared pan, pressing it down
well. Cover it with another layer of rice
paper, and place a light weight evenly
over the top.
7. Let the nougat sit until it cools
completely, then turn it out of the pan.
8. Cut the nougat into squares, wrap in
waxed paper, and store in an airtight
container.
9. You can also coat the nougat in
chocolate. Follow the instructions at the
end of Experiment 22.
