life before using yeast. After every
use, put it in the refrigerator as soon
as you can. The reason why bread
is not rising is generally because the
yeast is dead.
You can use the following methods
to see if the yeast you have is fresh
and active.
1) 1/2 Put 45-50 cup of lukewarm water
(45-50°C) in a measuring cup.
2) Add 2 teaspoon of whit sugar into the
cup and stir, then sprinkle 2 teaspoons
of yeast onto the water.
3) Place the measuring cup in a lukewarm
place and let it rest for about 10
minutes. Do not stir.
4) You should observe foam of up to 1
cup. Otherwise, the yeast is either
dead or not active.
9. Salt
Salt is required for the taste and
crust color of the bread to be better.
However, salt may prevent rising.
Avoid using too much salt in the
recipe. You may choose to not use salt
at all. If you do not use salt, the bread
will rise better.
10. Egg
Egg may improve the texture of the
bread, make its size bigger and add
a taste of egg to it. If you are using
eggs, make sure you are not using
the shell and spread it evenly in the
dough.
11. Grease, Butter and Oil
Grease can make the bread softer and
prolong its life. When using butter,
melt it or cut it into small pieces after
taking it out of the refrigerator and
make sure you mix it evenly into the
dough.
12. Baking Powder
Baking powder is usually used for
raising Ultra Fast bread and pastries.
Baking powder does not require any
waiting time or produce gas. These
are the elements that create bubbles
inside the bread or make the texture
softer.
13. Baking soda
The above apply to baking soda as
well. It can also be used together with
baking powder.
14. Water and Other Liquids.
Water is an essential ingredient for
bread. Generally, water between 20
and 25°C is the best. However, when
baking Ultra Fast bread, water at 45-
50°C must be used to speed up the
rising. You can use fresh milk or water
mixed with 2% milk powder instead
of water. This will improve the taste
and crust color of the bread. Some
recipes may use apple juice, orange
juice, lemon juice or other fruit juices
to enrich the taste of the bread.
Weight of the Ingredients
One of the important steps to
make good bread is to use the right
amount of ingredients. It is highly
recommended to use a measuring
cup and a measuring spoon for the
correct amount of ingredients. If the
ingredients are incorrect, the bread
will be significantly affected.

Water, fresh milk or milk powder
solution must be measured with a
measuring cup.
Observe the level of the measuring
cup horizontally with your eyes.
