AVOCADO TZATZIKI DIP
MAKES 3 CUPS (750 ML)
INGREDIENTS
1 English cucumber, peeled
1 avocado, peeled and pitted
4 cloves garlic
2 green onions
1 tsp (5 ml) fresh lemon zest
4 ozs (125 ml) whipped cream cheese
2 cups (500 ml) Greek yogurt, plain
1 tsp (5 ml) onion salt
1 tsp (5 ml) garlic powder
1/2 tsp (3 ml) fresh ground pepper
1 tsp (5 ml) fresh dill, chopped
6 mint leaves
DIRECTIONS
1. Slice cucumber lengthwise. Use a spoon to remove the seeds. Place
cucumber in the jar and puree for 30 seconds. Pour into a sieve to
strain excess water.
2. Place the strained cucumber and the remaining ingredients into the blender.
3. Secure the lid.
4. Set the speed control to the lowest speed and turn the blender on.
5. Slowly increase the speed to the highest setting and blend for about 1 minute.
6. Pour into a bowl and taste for additional seasoning.
7. Serve with pita triangles.
