Most chewing gum today is made from
synthetic rubber, but some chewing gum
is still made from natural rubber.
Natural chewing gum uses a gum
base called chicle, which is harvested
from trees in the Manilkara genus,
including Manilkara zapota and
Manilkara chicle. These trees are native
to Central America and grow in tropical
and sub-tropical climates.
The gum is harvested from these
trees using zig-zag or diagonal gashes in
the tree trunk, out of which liquid gum
oozes. The dripping gum is collected
in small bags or buckets. The sap is
then boiled until it reaches the desired
thickness.
Chicle is a natural gum which
contains polysaccharides, which are
molecules that are capable of increasing
a solution’s viscosity. They are used
as thickening agents, gelling agents,
emulsifying agents, and stabilizers.
