Simple Yeast Rolls
1 cup (237 mL) warm water, 100° to 110°F (38° to 43°C)
.25-ounce (8-g) package active dry yeast
1/4 cup (57 g) butter, melted and cooled
3 tablespoons (39 g) sugar
1 teaspoon (6 g) salt
1 egg
3 to 3 1/2 cups (372 to 434 g) all-purpose
Directions:
Pour water into Bowl. Add yeast and let dissolve for
5 minutes. Add butter, sugar, salt, and egg. Using Flat Beater, mix on
speed 2 for about 30 seconds. Add 3 cups (710 mL) of flour and mix
on speed 2-3 until it forms a shaggy dough. Switch to Dough Hook
and knead on speed 2-3 for about 3 minutes, or until dough clears
sides of Bowl and springs back when gently pressed. Add additional
flour, if necessary, to make a soft dough. Cover and let rise in a warm
place for about 1 hour.
Preheat oven to 350°F (180°C). Stir down dough and dump onto
lightly floured surface. Divide dough into 4 equal portions; then
divide each portion into 4 golf ball-sized balls. Place 16 balls in a
greased 9x13-inch (23x33-cm) baking pan. Let rise in a warm place
for about 30 minutes. Bake 25 to 30 minutes.
Makes 16 rolls.
Basic White Bread
3 1/4 cups (390 g) bread flour
4 teaspoons (28 g) honey
2 1/4 teaspoons (8 g) instant yeast
1 teaspoon (6 g) salt
1 1/4 cups (295 mL) milk
2 tablespoons (28 g) butter
Directions:
Place flour, honey, yeast and salt in Bowl. Heat milk and butter in
microwave for 1-1 1/2 minutes, or until milk measures between
110-115°F (43-46°C). Add to flour mixture. Attach Flat Beater to Mixer.
Turn mixer on speed 2 and mix for 1 minute until combined.
Switch attachment to Dough Hook. Knead on speed 3 for 7 to 10
minutes, until dough is elastic and smooth.
Take dough out of Bowl and shape into a tight ball. Coat a large bowl
with baking spray. Place dough ball in bowl and turn a few times to
coat dough ball. Cover bowl with plastic wrap and place in a warm
place to proof until doubled in size, about 1 hour. Gently punch
dough down and let rest for 10 minutes.
Preheat oven to 375°F (190°C). Spray a 9x5-inch (23x13-cm) loaf
pan with baking spray. Gently roll and stretch dough into a 9x7-inch
(23x18-cm) rectangle. Beginning on 7-inch side, roll up and place
seam-side down in loaf pan. Loosely cover with plastic wrap sprayed
with baking spray. Proof again for about 30 minutes, or until a light
finger press leaves an indentation on side of dough.
Bake 35 to 40 minutes or until bread sounds hollow when you tap top
with your fingers. Immediately remove from pan and cool on wire
rack. Slice when completely cool.
