Operating Instructions
Operating the Charbroiler - cont.
Turn down the heat when using pots, pans or other devices on the cooking grates.
The solid bases can result in excessive heat being trapped. Damage to the internal
components and cast iron parts can occur.
NOTE: When the charbroiler is rst heated, it will smoke until oil (used in manufacturing) and dust (from
storage and shipping) are burned off. One hour at maximum for all burners is usually sufcient.
Turn the burners “ON” and preheat for no more than 15-20 minutes before cooking. Set the knobs to the desired
ame height or temperature. Each valve will control the gas ow to the burner to bring that area of the unit up to
the set temperature. If different temperature settings are to be used, adjoining areas should be set at progressively
higher temperatures using the lowest temperatures on the outside burners. A uniform and systematic approach to
the loading of the unit will produce the most consistent product results.
Radiant Charbroiler
1. Place the angled radiants in their position as shown in Fig. 8-1.
2. Make sure that the radiants are sitting properly into the slots on the front and rear supports. Radiants should be
centered over straight sections of the burners.
3. Place the cover over burner, sitting properly into the slots on the rear support as shown in Fig. 8-2.
Rock Charbroiler
1. Place the racks that hold the rocks into position over
the burners.
Failure to arrange the char rocks
properly can result in excessive
heat being trapped below the char
rocks. Damage to the burners and
cast iron racks can occur.
2. Place the char rocks on the
rack. Do not pile or stack
the char rocks.
3. Please use the following amount
of char rocks per model:
Set rocks as seen in photo.

GCB36G-RK: 90 pcs
GCB48G-RK: 120 pcs
COOKING GRATES
Place the top cooking grates with the grid bars angled
toward the front as shown in Fig. 8-3. Or, place the grid
bars at, not angled, for cooking.
NOTE: When cooking grates are placed angled toward
the front, the grooves on top will guide the excess fat
drippings into the grease trough.
The cooking grates, cast iron radiants, and char rock grids
are constructed of heavy duty cast iron which will oxidize if
immersed in water. Lightly oil grates when not being used
regularly.
