2.6 Drain Hose Connections
If you often cook large quantities of fatty foods (e.g. poultry), add a fat separator or
drain device. In both cases, maintain the indicated “air gap”.
The drainpipe must be able to withstand high
temperatures (beyond 90°C/194°F).
In the series, the drainpipe is supplied as standard
accessory, but if you have extra needs, contact the
manufacturer to purchase it.
The drainpipe must have the following features:
• Be 60 inches long max.
• Be free of kinks.
• Have an “air gap” of at least 1 inch.
NOTE: The oor drain should be offset from
the location of the unit to prevent steam from
entering the oven’s components.

AIR GAP
"Air gap" is the clearance between the drainpipe and the evacuation area (grate or
another receiving tube). Compliance with this regulation guarantees that potentially
harmful bacteria CANNOT rise through the drainpipe and contaminate the food.
